I bought a knock-off electric knife sharpener and it fizzled out after 5 minutes of use.
A replacement motor is easy enough to find, but that plastic thingamabob attached to the old one is impossible to remove so I need to figure out a way to extend the shaft by a couple of inches and attach some sort of spindle to it. Any ideas?

When you say that plastic thingy is impossible to remove, it's probably just pushed on and can be pulled off with a bit of levering between it and the motor.
If that's too hard, and you don't need it off in one piece, then fire is, as always, the answer. Or at least heat - soften it with a hot hairdryer or paint stripper, then pull it off.
